I know that when I research writing in the iron age that I can then see my ally's stuff, but - does my researching it mean that he can see my stuff too or does he have to research writing to get that?

Perhaps you mis-spoke, Axe, but Writing (which you should acquire at the earliest feasible opportunity), is available in Bronze.

I dont research it until im ironing or one of the last useful techs in the gov.center. But thats because I can count on my allies most games to take care of themselves, and/or Im too busy killing the enemy that I dont care or dont have the resources to get it.

I am a diff player, I have often have had to choose between nobility and diplomacy, most often I get dip. Ain't I weird?

I actually forget half the time. Usually when I'm using a non-gold-dependant civ like phoen, I do it pretty early - I put a couple of men on gold in tool, and have enough gold by bronze to research writing and get a couple of cats.
On the other hand, if I'm playing my old friends mace, I forget, or just can't be bothered. Dunno why.
