Besides Scenarios and Custom Scenarios, I'm having trouble accessing or even finding anything else within AoEE. It seems that the files for DE, such as Audio Files, SLP Files (Graphics), the DAT itself and even Random Map Scripts are behind the "WindowsApps" Folder, which doesn't grant to access to browse and seems like a complete nightmare to get the files from. Knowing Microsoft, this is probably against the EULA as well or something.

Anyone else having any luck or is this the extent of what we can do with AoEE?

Did you try to mod the steam version?
I should also note that AoE: Definitive Edition is kind of supported as well. If you use a tool to dump the game's files from memory, you can use SLX Studio to view SLPs. The game uses multiple color palettes, so you just need to load the correct one from the Palettes folder to view the SLP correctly. You can only view AoE: DE assets, though. The game is not moddable.

It's not really possible in the Windows Store version of the game because the files are locked, but the Steam version can be modded:



SLX Studio supports the 4.0X version SLPs that AoE1 DE uses. With there being x1, x2, and x4 graphic sizes, 32 directions for units, and frame counts per SLP often being over a thousand each, it's not really easy to mod for the game. Mods would also probably need to have an installer that keeps backups of the files it replaces.
