Why can't I trade commodities in my market ?
I only get the option to research things.
At present I need gold and there are no mines

So the only ways to get gold are
I) to build a temple, make a priest and get a relic (which I don't, or didn't before game crashed completely for reasons unknown my new monitor maybe)
or
ii) to find a gold mine (I fear there weren't any left before the crash ) ?

There are things like relics called "artifacts," but they don't generate gold.
Another way to get gold is to use trade boats to trade at the docks of other players (on water maps).

Does that hold true if the one other player in the game (the computer) is your enemy ? Could I get in and out of their docks without being sunk ? I suppose if it were an isolated dock....

Epd999 is right. Sometimes you can trade at enemy docks without them ever attacking, such as when an enemy builds a dock very far away from their main base (which happens every now and then).
Also, what I often do on water maps (if I'm playing against more than one computer player) is destroy an enemy completely except for one of their docks. So the enemy will basically be gone, but you can keep trading at his dock!
