How can I change the amount for gold in a gold mine and amount of wood in a tree and so on?

Super-impose gold mines over them or edit the .DAT files.

You can edit the .dat files with the AoEd/RoRd utility. However, it can be a difficult process. I'll work on getting a tutorial up in the SD forums.

Yeah if you want more just put a few in the same place with the Enhanced or Composite editor.

Yes, you can use the new editors to stack gold mines on top of each other, which is the easy way. If you really want to change the amount of resources in a single unit, you'll be getting into the complicated and frustrating world of file editing.
