It's always better to make your own AI and per files though. That way, you can easily control what your computer players do.
If you want to use the default strategies and personalities, the best way to find out what they do is to look at their structure using the AI and per editors found in the granary.
A basic thing to know is that AI files (strategy) control what computer players build, research and what units they get, while the per files (personality) are responsible for the computer player's behaviour. There is also a way to define where the computer builds his stuff with the cty editor.
