One thing you don't seem to be considering in your analysis, is that fights are not always between equal numbers of the same units.
Measuring the number of blows cents can take, and
how many they must give to slay various units...
mace cent vs persian legion - 25/6
carth cent vs persian legion - 25/7
mace cent vs cho legion - 25/8
carth cent vs cho legion - 25/9
mace cent vs hittite AE - 38/21
carth cent vs hittite AE - 33/24
mace cent vs yammy HHA - 38/4
carth cent vs yammy HHA - 34/4
mace cent vs greek helepolis - 5/2
carth cent vs greek helepolis - 6/2
mace cent vs greek hcat - 3/5
carth cent vs greek hcat - 4/5
It seems that lacking metallurgy weakens carth's
centurions more than lacking chainmail does, and
that mace's shield bonus is useful after all.
Carth's cents are still better against siege weapons,
but still not very good. It's probably better to use
some other unit, like eles for example.

But watch out, I am working on a strategy that calls for stopping villager production with only 8 villagers, lots of fishing, a rush to bronze and then continual pumping of Carth Cents.

Considering carth's lack of woodcutting or FB cost
bonuses, I expect the optimal number of villies
before tooling would be at least 12.
You probably can't get 12 mins bronze with that,
but you might still get faster than 15, and you'll
have quite a bit of food to spare.
Don't forget to build multiple TCs as soon as you
can in bronze to re-adjust your villies to FB ratio,
otherwise you'll find yourself with lots of food
but shortages in the other resources.
Finally, remember that bronze is ruled by archers,
which will give even carth cents a rough day. I'd
recommend making up the bulk of your army with impies,
with some anti-siege camels and a handful of cents
as pincushions. I've seen it work, might want to
ask lgn_kingtut if you see him on.
Good luck!
