I usually play either Phoenician, Roman or Egyptian but I want to learn to play other civs successfully. I have had my eye on Macedonia and Hittite. I want to know some more in-depth strategies for these two civilizations beyond the obvious.

I am no expert, but I am sure playing Random civ games will surely help. If you get a slow civ, a bad civ that is extremely hard to play if you are new to it such as Palmyran, Greek, Carthiginian (these are hard IMO) play it. It help you be prepared for events like slow-civ games. It will really open up the game for you if you know a good strategy for each civ...that you have nailed down. I am not saying this is easy. I am saying you would be practically invincible. Please note I am no expert at these type of topics. You should hope someone like Thorfinn, neilkaz or amagedn posts here. They are the experts on these type of things. I have picked up a lot from them in the little time I have been here.
You may also consider reading all the strategy posts that you can. The AOEH Academy is the place to go for this. Also, I know Thorfinn compiled a list all the large, important, worthwhile posts somewhere, but I do not know the URL. Thorfinn...?
Anyways, keep trying. I am trying to get better at AoE in preparation for AoK-which I highly aticipate, by the way-on the zone. If you fear that the Zone is too difficult for you, learn the basics of the civs against the computer. You can do this with the same feel of a multiplayer game on your own machine. Here are the directions:
Launch AoE. Go to Multiplayer> TCP/IP game> Create.
Once you get there, make as many players as pleases you the players the computer. Launch.

Quickly I will suggest that you practice your starts w/you new chosen civ vs the computer and get used to being able to boom a bit less..and bronze as fast in general.. etc.
As for Mace or Hitt strats.. check out Thorfinn's link and I am sure you will find many posted here over the past year that are quite good.
If you go back you will see posts by Ender and Emowilli that are always worth reading...neilkaz...

Oops.. Hitt's start is just like Egypt's as the gold mining doesn't matter early on. I forgot you listed Egypt..neilkaz..
